About Thailand

Thailand has a geographic area of 514,000 sq km (198,457 sq mi) - about half the size of Ontario. Situated just north of the equator (at a latitude of 6 degrees at the southern tip, to 20 degrees in the north), mean temperatures in Thailand are very constant year-round, and hot. Throughout the year, daytime temperatures are around the mid-30s celsius, and nighttime temperatures are in the mid 20s.

The population in Thailand is approximately 70 million, of which around 10 million live in the capital city, Bangkok. Most Thai people follow the Therevada Buddhist religion.

The word "Pi" (pronounced like the letter, "P") means "older brother" in Thai, thus "Pi-Tom's" literally translates as "older brother Tom's".

Thai Cooking Technique

While it appears Thai cooking techniques are very time consuming compared with other cuisines, it is in fact the cutting techniques which require time. Despite the added preparation time, it is these techniques - from slicing and dicing, to mincing and chopping - which give Thai cuisine its exciting aesthetic appeal.

Thai salad (Yum) - "Yum" or Thai salad dishes have the same main ingredients which are lime juice, fish sauce, sugar and chilli but with different spices and herbs. A popular "Yum" dish is: Yum Nuer (Spicy beef salad) - grilled sliced beef with lime juice, fish sauce, chilli, lettuces and shallots.

This Month's Recipe - Mango salad

Salad Ingredients:

2 cups - thinly sliced mango
½ cup - sliced Spanish onion
1 tbsp - chopped green onion
½ cup - red pepper slices
1 tbsp - lemongrass powder
1 tbsp - dried onion

Directions:

1. Gently toss all salad ingredients together.
2. Put fish sauce, sugar, lemon juice, and chilli powder into separate bowl.
3. Stir dressing ingredients until blended well.
4. Pour dressing over salad mixture.

Serves 4
